
For this Around the World Trip, we are celebrating the USA and making one of our family’s favorite side dishes: Roasted Potatoes! They are so easy to make and your kids can do most of it on their own! This recipe only requires 5 ingredients and is so so yummy. Serve with ketchup for the kids or a side of garlic mayo and they’re perfection.

We always use the tiny yellow potatoes if we can find them. There’s no need to cut them, saving a bit of time in the kitchen. I just give them a good rinse then put them in a bowl. If these aren’t available, I go with the smallest yellow or red potatoes and chop them into bite sized pieces.

Tuscan herb olive oil leftover from our Italian culinary adventure added another layer of flavor but plain olive oil will do too!


We use regular salt, but any kind will do! Fresh minced garlic or jarred minced garlic is perfectly fine. If you are out of garlic, sub the garlic and regular salt for seasoned salt.

We happened to have parsley growing in our herb garden this year so I cut a bunch from it. After it’s chopped, you should have about a tablespoon or two to toss over your cooked potatoes. This adds a bit of flavor and some fun color to the dish!

Bruno was so proud of his potatoes! This is one of my boys’ favorite dishes and they get so excited anytime we make these. To round off our American meal, we served with turkey burgers, corn on the cobb, and sautéed peppers. A Recreationale for the adults and milk for the kids washed everything down nicely.

Equipment
- Baking sheet
Ingredients
- 16 oz Potatoes
- 1½ tbsp olive oil
- 1½ tbsp minced garlic
- 1 tsp salt
- 1½ tbsp fresh chopped parsley
Instructions
- Cut potatoes into bite sized pieces (or use tiny potatoes like we did!)
- All ingredients into a bowl (except parsley) and stir
- Pour seasoned potatoes into baking sheet and spread evenly
- Bake in preheated 400°F oven for 50 minutes, flipping halfway through cooking time. Potatoes are done when you can easly slide a fork into them.
- Toss potatoes with chopped parsley and serve
